Ingredients:

For the Fish:

4 pieces of white fish fillets (such as cod, haddock, or halibut), skinless and boneless, 6-8 oz each

1 cup all-purpose flour, plus extra for dredging

1 teaspoon baking powder

1/2 teaspoon salt

1/2 teaspoon freshly ground black pepper

1 cup cold sparkling water or beer

Vegetable oil or beef dripping, for frying

For the Chips:

4 large Russet or Maris Piper potatoes, peeled

Vegetable oil or beef dripping, for frying

Salt, to taste

For the Mushy Peas (optional):

2 cups frozen peas

1 tablespoon butter

1/4 cup heavy cream

Salt and pepper, to taste

Instructions:

Prepare the chips: Cut the potatoes into thick sticks or wedges, about 1/2-inch thick. Rinse the cut potatoes in cold water to remove excess starch and drain well. Pat them dry with a clean towel or paper towels.

Fry the chips: Heat the oil or beef dripping in a deep fryer or large heavy-duty pot to 325°F (160°C). Fry the potato chips in batches for 5-7 minutes until they are soft but not browned. Remove the chips from the oil with a slotted spoon or spider strainer and drain on paper towels. Set aside and allow them to cool.

Prepare the fish batter: In a large bowl, mix together the flour, baking powder, salt, and pepper. Gradually whisk in the cold sparkling water or beer until you get a smooth, thick batter.

Coat the fish fillets: Pat the fish fillets dry with paper towels, then dredge them in a light coating of flour. This helps the batter adhere to the fish.

Heat the oil or beef dripping for the second fry to 375°F (190°C).

Fry the fish: Dip each floured fish fillet into the batter, allowing the excess to drip off. Carefully lower the battered fish into the hot oil and fry for 5-7 minutes, or until the batter is golden and crispy. Use a slotted spoon or spider strainer to remove the fish from the oil and drain on paper towels.

Refry the chips: While the fish is frying, refry the chips for 2-3 minutes, or until they are crispy and golden. Remove the chips from the oil with a slotted spoon or spider strainer, and drain on paper towels. Sprinkle with salt.

Optional – Make the mushy peas: In a small saucepan, cook the frozen peas according to the package instructions. Drain and return them to the pan. Add butter, heavy cream, salt, and pepper, and mash until you reach a desired consistency. Adjust seasoning as needed.

Serve the crispy fish and chips on a plate or newspaper with a side of mushy peas, tartar sauce, and a wedge of lemon. Enjoy your homemade English Fish & Chips!

To make French fries like McDonald’s, follow these steps:

Ingredients:

4 large Russet potatoes (uniformly sized for consistency)

2 quarts of water

2 tablespoons white sugar

2 tablespoons distilled white vinegar

Peanut oil or vegetable oil (for frying)

Salt

Instructions:

Wash and peel the potatoes. Cut them into uniform 1/4-inch thick sticks, trying to maintain consistency in size for even cooking.

In a large mixing bowl, combine the water, sugar, and vinegar. Stir until the sugar dissolves. Soak the potato sticks in the water mixture for 30 minutes to remove excess starch and improve their texture.

While the potatoes are soaking, preheat the oil in a deep fryer or a heavy-duty deep pot to 300°F (150°C). Ensure there is enough oil to fully submerge the fries, but do not fill more than halfway to avoid overflow.

After 30 minutes, drain the potatoes and pat them completely dry with paper towels to remove excess moisture.

Fry the potatoes in batches to avoid overcrowding. Maintain the oil temperature at 300°F (150°C) and blanch the fries for 2-3 minutes. They should be slightly cooked but not yet golden. Use a slotted spoon or spider strainer to remove the fries from the oil and transfer them to a wire rack or paper towels to drain excess oil. Let them cool for about 10 minutes.

While the fries cool, increase the oil temperature to 375°F (190°C). Once the oil is heated, fry the potatoes again in batches for 3-4 minutes, or until they turn golden brown and crispy. Be sure to maintain the oil temperature during frying.

Remove the fries from the oil using a slotted spoon or spider strainer and place them on a clean wire rack or paper towels to drain excess oil.

Season the fries with salt while they’re still hot. Toss them gently to distribute the salt evenly.

Serve your McDonald’s-style French fries immediately for the best taste and texture. Enjoy with ketchup or your favorite dipping sauce.

Iranian cuisine, also known as Persian cuisine, is a rich and diverse culinary tradition reflecting the varied geography, climate, and history of Iran. With its unique flavors and ingredients, Iranian food has been enchanting food enthusiasts around the globe for centuries. Among the myriad of Iranian dishes, Chelo Kabab stands tall as the most popular and emblematic dish that represents the essence of Persian cuisine. In this article, we delve into the world of Chelo Kabab, exploring its history, ingredients, and cultural significance.

History of Chelo Kabab

The history of Chelo Kabab dates back to ancient Persia, where grilling meats over an open fire was a common cooking technique. The word ‘kabab’ is derived from the Persian word ‘kabāb,’ which means ‘frying’ or ‘grilling,’ while ‘chelo’ refers to the steamed and buttered Persian rice that accompanies the dish. The combination of these two components, grilled meat and rice, forms the foundation of Chelo Kabab.

Over time, the dish has evolved and adapted to regional tastes and ingredients, with various types of kababs emerging, such as Kubideh (ground meat kabab), Barg (thinly sliced meat kabab), and Jujeh (grilled chicken kabab). Today, Chelo Kabab is a national treasure and a symbol of Iranian hospitality.

Ingredients and Preparation

The secret to Chelo Kabab’s delectable taste lies in its simple yet high-quality ingredients and the skillful preparation techniques employed. The key components of Chelo Kabab include:

Meat: The most common meats used for Chelo Kabab are beef, lamb, or chicken. The meat is meticulously selected and prepared to ensure tenderness and flavor.

Marinade: The choice of marinade is crucial in creating the distinctive taste of Chelo Kabab. It typically includes yogurt, onion, garlic, lemon juice, saffron, and various spices such as turmeric, black pepper, and salt. The meat is marinated for several hours, or even overnight, to achieve maximum flavor infusion.

Rice: The Persian rice (Chelo) served with Chelo Kabab is renowned for its delicate, aromatic, and fluffy texture. It is prepared using a unique method that involves parboiling, rinsing, and steaming the rice with butter and saffron, resulting in a beautifully golden and fragrant dish.

Grilling: Kababs are traditionally grilled over charcoal, which imparts a smoky flavor to the meat. The grilling process requires skill and experience to ensure that the kababs are cooked to perfection.

Serving and Accompaniments

Chelo Kabab is traditionally served on a bed of steamed, buttery saffron rice. It is often accompanied by grilled tomatoes, raw onions, fresh herbs (such as parsley, mint, and basil), and a dollop of sumac, a tangy, deep-red spice that enhances the flavor of the dish. To complement the meal, a glass of cool yogurt drink called “doogh” is often served on the side.

Cultural Significance

Chelo Kabab is not just a dish; it is a symbol of Iranian identity, pride, and hospitality. It is often served at family gatherings, celebrations, and special occasions, bringing people together to share and enjoy the flavors of Persian cuisine. The dish’s significance transcends borders, as it has become an ambassador of Iranian culture worldwide, showcasing the artistry, skill, and passion that goes into creating this culinary masterpiece.

Conclusion

Chelo Kabab is undoubtedly the most popular Iranian dish, and it holds a special place in the hearts

Ash Reshteh is a hearty, flavorful Persian soup filled with healthy greens, beans, and noodles. Here’s a complete, step-by-step recipe to make Ash Reshteh:

Ingredients:

1 cup chickpeas, soaked overnight (or use canned chickpeas)

1 cup kidney beans, soaked overnight (or use canned kidney beans)

1 cup navy beans, soaked overnight (or use canned navy beans)

200 grams reshteh noodles (or substitute with linguine or fettuccine)

8 cups vegetable broth or water

2 large onions, thinly sliced

5 cloves garlic, minced

1 teaspoon turmeric

Salt and pepper, to taste

4 cups chopped fresh spinach

2 cups chopped fresh cilantro

2 cups chopped fresh parsley

1 cup chopped fresh dill

1 cup chopped green onions

1 cup kashk (whey, or substitute with sour cream or Greek yogurt)

2 tablespoons vegetable oil

1 tablespoon dried mint

Optional garnish: fried onions, sautéed garlic, and additional kashk

Instructions:

If using dried beans, drain and rinse the soaked chickpeas, kidney beans, and navy beans. In a large pot, add the beans and 6 cups of water or vegetable broth. Bring to a boil, then reduce the heat and let them simmer for about 1 hour, or until the beans are tender. If using canned beans, rinse and drain them before adding to the pot.

In a separate large pot, heat 2 tablespoons of vegetable oil over medium heat. Add the thinly sliced onions and sauté until they are golden brown, stirring occasionally. This should take about 15 minutes. Remove half of the fried onions and set aside for garnish.

Add the minced garlic and turmeric to the pot with the remaining onions, and sauté for an additional 2 minutes.

Add the cooked beans (along with their cooking liquid) or canned beans to the pot with the onions. Add the remaining 2 cups of vegetable broth or water, and bring the mixture to a boil.

Break the reshteh noodles in half and add them to the pot. Cook for about 10 minutes, or until the noodles are al dente.

Stir in the chopped spinach, cilantro, parsley, dill, and green onions. Cook for an additional 10 minutes, or until the greens are tender.

Season the soup with salt and pepper to taste. Add the kashk, reserving some for garnish, and stir until it’s well incorporated.

In a small saucepan, heat 1 tablespoon of vegetable oil over medium heat. Add the dried mint and sauté for 1-2 minutes, until fragrant. Be careful not to burn the mint.

To serve, ladle the soup into bowls and garnish with the fried onions, sautéed garlic (optional), and a dollop of kashk. Drizzle the mint-infused oil over the top.

Enjoy your homemade Ash Reshteh!

Ingredients: For the Sabzi Polo (Herb Rice):

2 cups Basmati rice

4 cups water

1 bunch parsley

1 bunch cilantro

1 bunch chives or green onions

1 bunch dill

1/4 cup dried or fresh savory leaves (optional)

1/4 cup dried or fresh fennel leaves (optional)

1 teaspoon salt

1/2 teaspoon pepper

1/4 cup oil

For the Mahi (Fish):

4 fish fillets (e.g. whitefish, salmon, or trout)

2 lemons

4 garlic cloves

1 teaspoon salt

1/2 teaspoon pepper

1/2 teaspoon turmeric

1/4 cup flour

1/4 cup oil

Instructions:

Prepare the rice: Rinse the Basmati rice thoroughly under running water until the water is clear. Soak it in a large bowl covered with water for 30 minutes.

Prepare the herbs: Wash and finely chop the parsley, cilantro, chives or green onions, and dill. Set the chopped herbs aside.

Cook the rice: Bring 4 cups of water to a boil in a large pot. Add salt. Drain the soaked rice and add it to the boiling water. Cook the rice for about 10 minutes over medium heat until it is almost cooked. Then, drain the rice in a colander and let it drain briefly.

Prepare the herb rice: Heat the oil in the same pot used for cooking the rice. Add the chopped herbs and the drained rice to the pot and mix well. Season with pepper. Cook the rice over low heat for about 40 minutes until it is fully cooked and the herbs have released their flavor.

Marinate the fish: Rinse and pat dry the fish fillets. In a shallow dish, mix lemon juice, chopped garlic, salt, pepper, and turmeric. Coat the fish fillets in the marinade, ensuring they are fully covered. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.

Fry the fish: Heat the oil in a large frying pan. Lightly dust the marinated fish fillets with flour and shake off any excess. Carefully place the fillets in the hot oil and fry for 3-4 minutes on each side until golden brown and cooked through. Remove the fish from the pan and place on a paper towel-lined plate to drain any excess oil.

Serve: Arrange the herb rice on a large serving platter. Place the fried fish fillets on or beside the rice. Sabzi Polo Mahi can be served with additional lemon wedges, pickled vegetables (e.g. pickled olives, cucumbers, or garlic), and a refreshing yogurt dip (Mast-o-Khiar).

Enjoy this traditional Iranian dish rich in flavors and textures, perfect for a festive occasion or a simple family meal.

Kuku Sabzi is a popular Iranian dish, a type of herb frittata made with various fresh herbs, eggs, and other ingredients. It’s a flavorful, healthy, and easy-to-make dish that can be served as a side or main course. Here’s a step-by-step recipe for making Kuku Sabzi:

Ingredients:

5 large eggs

4 cups mixed fresh herbs, finely chopped (parsley, cilantro, dill, chives or green onions, and optionally spinach or kale)

1/2 cup walnuts, coarsely chopped (optional)

1/4 cup dried barberries or chopped cranberries (optional)

1 teaspoon turmeric

1/2 teaspoon baking powder

Salt and pepper, to taste

2 cloves garlic, minced (optional)

2 tablespoons vegetable oil or ghee (clarified butter)

Instructions:

In a large mixing bowl, beat the eggs until well blended. Add turmeric, baking powder, salt, and pepper. Mix well.

Thoroughly wash and finely chop the fresh herbs. Make sure to remove any thick stems. If using garlic, mince it finely.

Add the chopped herbs, garlic (if using), walnuts, and dried barberries or cranberries to the egg mixture. Stir until everything is well combined.

Heat the vegetable oil or ghee in a non-stick frying pan (8-10 inches) over medium heat. Once hot, pour the egg and herb mixture into the pan, spreading it evenly with a spatula.

Cover the pan with a lid and let the Kuku Sabzi cook on medium-low heat for about 10-15 minutes, or until the edges are set, and the bottom is golden brown.

To flip the Kuku Sabzi, place a large plate over the pan and carefully turn it upside down. Slide the Kuku Sabzi back into the pan with the uncooked side down. Alternatively, you can cut the Kuku Sabzi into wedges and flip each piece individually.

Cook the other side for another 10-15 minutes, or until it’s also golden brown and fully cooked through.

Once the Kuku Sabzi is cooked, slide it onto a serving plate. Allow it to cool for a few minutes before cutting it into wedges.

Serve warm or at room temperature, with bread, yogurt, or a side salad. Enjoy your delicious Iranian Kuku Sabzi!

Note: Kuku Sabzi can be customized to your taste preferences. Feel free to add other herbs or spices or adjust the amounts of each ingredient to suit your palate.

Shirini Nokhodchi is a popular and highly favored cookie for the Persian New Year (Nowruz). Follow this tutorial from the website Chi Shi to learn how to make these cookies.

Ingredients for Shirini Nokhodchi:

Chickpea flour: 500 grams

Powdered sugar: 150 grams

Vegetable oil: 200 grams

Cardamom powder: 1 teaspoon

Nigella seeds: as needed

Instructions:

First, if you don’t have vegetable oil, melt 200 grams of solid oil over heat and allow it to cool and solidify. Sift the chickpea flour, powdered sugar, and cardamom powder together, then mix well until uniform.

Next, add the vegetable oil to the chickpea flour mixture and combine by hand until the dough comes together and holds its shape. Note that this dough is much drier than other cookie doughs.

Now, use an electric mixer to mix the dough until it becomes smooth and uniform. If you don’t have an electric mixer, you can run the dough through a grinder four times or knead it by hand for about 30 minutes until it takes shape.

After the dough is ready, place a sheet of parchment paper on a baking tray and flatten the dough on a smooth surface. The thickness of the dough is up to personal preference, but the standard thickness for Shirini Nokhodchi is about 2 centimeters.

If you prefer thinner cookies, you can make them about 1 centimeter thick. Once the dough is flattened, cut it with your desired cookie cutter. Carefully transfer the cut cookies to the baking tray using a knife.

Finally, after arranging all the cookies on the parchment paper, sprinkle some nigella seeds, pistachio powder, or camelthorn seeds on top. Bake in a preheated oven at 175 degrees Celsius (347 degrees Fahrenheit) for 15 to 20 minutes until the cookies are ready.

Once the cookies are done baking, wait for them to cool completely before transferring them to your desired container. You can store these cookies in the refrigerator for up to one to two weeks.

Tips for making Shirini Nokhodchi without an oven:

Place a large pot on low heat and use a flame diffuser underneath. Put a trivet inside the pot and heat it for 15 to 20 minutes with the lid on until it gets very hot.

After the pot is heated, place the cut cookies on a suitable-sized tray and put it on the trivet inside the pot. Use a towel on the pot’s lid to prevent heat from escaping, helping the cookies cook faster.

It takes about 20 to 30 minutes for the cookies to bake. Once the bottom of the cookies turns golden, they are done. After baking, don’t touch the cookies as they will crumble easily. Wait for them to cool, then collect them.

Instructions: In a large bowl, mix sugar and eggs with a hand mixer until well combined. Then add honey, rosewater, vanilla, baking powder, yogurt, cardamom, and salt to the bowl and mix well with the hand mixer. Add half of the vegetable oil and sift the flour twice before adding it to the bowl. Mix the ingredients well until a dough-like consistency is formed. Then add the remaining oil and mix again.

Preheat the oven to 200°C (392°F). Arrange the Cake Yazdi molds on an oven tray. You can line the metal molds with parchment paper or grease them with oil. Fill two-thirds of each mold with the Cake Yazdi batter. Use a small knife to make a cross mark on top of the batter in each mold, which greatly impacts the puffiness of the cakes. If desired, you can also sprinkle some sesame seeds on top of the batter.

Place the tray in the preheated oven. Bake the cakes for 15 to 20 minutes until they are fully puffed and golden. Once the cakes are ready, remove them from the oven and set them aside. Allow the Cake Yazdi to cool completely at room temperature. Then arrange them in your preferred container. To make the cakes more festive, you can melt some chocolate using the bain-marie method and drizzle it over the cakes.

Indian cuisine has a long and fascinating history that dates back to ancient times. The earliest evidence of food in India dates back to the Indus Valley Civilization, which existed around 2500 BCE. The people of this civilization relied on a variety of crops, including rice, wheat, and barley, and they used spices such as cumin, coriander, and ginger to flavor their food.

Over time, Indian cuisine was influenced by various cultures and traditions, including those of the Mughals, the British, and the Portuguese. These influences brought new ingredients and cooking techniques to India, leading to the development of new dishes and flavors.

One of the most significant influences on Indian cuisine was the introduction of Buddhism in the 3rd century BCE. Buddhist monks were vegetarians, and this led to the development of a rich tradition of vegetarian cuisine in India. Today, India is known as a vegetarian-friendly country, with many delicious vegetarian dishes available at restaurants and street stalls.

Diversity of Indian Cuisine

India is a diverse country, with a variety of cultures, traditions, and cuisines. Each region of India has its own unique culinary traditions and flavors, and Indian cuisine is characterized by its use of spices and herbs to create complex and delicious flavors.

North Indian cuisine is known for its rich, creamy curries, which are made with a base of onions, tomatoes, and yogurt, and flavored with spices such as cumin, coriander, and turmeric. Popular dishes include chicken tikka masala, butter chicken, and paneer makhani.

South Indian cuisine, on the other hand, is characterized by its use of rice, lentils, and coconut. Dishes such as dosa, idli, and vada are popular in the south, as are spicy curries made with coconut milk and seafood.

In the east, Bengali cuisine is known for its use of mustard oil and seafood, while in the west, Gujarati cuisine is characterized by its sweet and sour flavors and use of vegetables and lentils.

Unique Characteristics of Indian Cuisine

One of the unique characteristics of Indian cuisine is its use of spices and herbs to create complex and delicious flavors. Some of the most commonly used spices in Indian cooking include cumin, coriander, turmeric, cardamom, and cinnamon. These spices are often used in combination to create unique flavor profiles.

Another characteristic of Indian cuisine is its use of a tandoor oven to cook meats and breads. A tandoor is a cylindrical clay oven that is heated with charcoal or wood, and it is used to cook foods at high temperatures. Tandoori chicken, naan bread, and kebabs are all popular dishes that are cooked in a tandoor oven.

Indian cuisine also places a strong emphasis on vegetarianism, with many delicious vegetarian dishes available at restaurants and street stalls. This is due to the influence of Buddhism and other religious traditions, which promote vegetarianism as a way of life.

Indian cuisine is also characterized by its use of a variety of cooking techniques. Many Indian dishes are cooked using a method called “tempering,” which involves frying spices in oil or ghee to release their flavors and aromas. This technique is often used to create the base for curries and other dishes.

Another common cooking technique in Indian cuisine is “dum cooking,” which involves sealing a pot with dough and slow-cooking the food inside. This technique is often used for biryanis and other rice dishes, as well as for slow-cooking meats and vegetables.

Indian cuisine also includes a wide variety of breads, including naan, roti, and paratha. These breads are often cooked in a tandoor oven or on a griddle, and they are served alongside curries and other dishes.

Desserts are an important part of Indian cuisine, and there are many sweet treats to choose from. Some popular desserts include gulab jamun (deep-fried dough balls in a sweet syrup), rasgulla (soft, spongy cheese balls in a sweet syrup), and kulfi (a type of Indian ice cream).

In addition to its delicious flavors and unique characteristics, Indian cuisine also has many health benefits. Many Indian dishes are made with nutritious ingredients like lentils, vegetables, and whole grains, and the use of spices and herbs has been linked to a variety of health benefits, including reducing inflammation and aiding digestion.

Barbari is a traditional Persian bread that is enjoyed throughout Iran and in other parts of the Middle East. Here are some details about this delicious bread:

Ingredients: The dough for Barbari is made from flour, yeast, salt, and water. The dough is typically left to rise for several hours before being shaped into long, flat loaves. Before baking, the loaves are often topped with sesame seeds or Nigella seeds.

Texture and flavor: Barbari has a chewy texture and a slightly sour taste, which comes from the use of sourdough starter in some recipes. The bread is also characterized by a thin, crisp crust and a soft, fluffy interior.

History: Barbari has been a staple bread in Iran for centuries and is believed to have originated in the city of Tabriz. It is often served for breakfast or as an accompaniment to savory dishes, such as stews and kebabs.

Serving: Barbari is often served warm and fresh from the oven, and can be eaten on its own or used to make sandwiches. It is also a popular choice for dipping into soups and stews.

Cultural significance: Barbari is a beloved symbol of Iranian cuisine and culture, and is often featured in Iranian culinary events and festivals. It is also a common sight at bakeries and street vendors throughout the country.

Overall, Barbari is a delicious and iconic bread that has been a part of Iranian culinary tradition for centuries.

In a large mixing bowl, combine the flour, yeast, and salt.

Add the warm water and mix well until a soft dough forms.

Knead the dough for about 10 minutes until it becomes smooth and elastic.

Place the dough in a clean, oiled bowl and cover with a clean towel. Let the dough rest in a warm, draft-free place for 2-3 hours, or until it has doubled in size.

Preheat your oven to 425°F (218°C) and place a baking stone or an upside-down baking sheet on the middle rack to heat up.

Gently punch down the dough and divide it into two equal pieces.

Roll out each piece of dough into a long, oval shape, about 1/2 inch thick.

Place the dough on a sheet of parchment paper and brush it with vegetable oil.

Use your fingers to make deep, diagonal grooves in the dough, then sprinkle sesame seeds or Nigella seeds over the top.

Carefully transfer the dough and parchment paper onto the hot baking stone or baking sheet.

Bake the Barbari for 15-20 minutes, or until it is golden brown and the crust is crispy.

Remove from the oven and let the bread cool for a few minutes before slicing and serving.

Enjoy your homemade Barbari bread!
